Nathan and I recently celebrated our one year anniversary. The time really has flown by and it has been lovely!
For our anniversary weekend I decided to make Nathan a four layer raw ice cream cake. This turned out splendidly, even without a spring form pan (I used an aluminum pie pan). It was incredibly decadent without all the negative things that most often come with ice cream cake. Nathan loved it and I was once again thankful for GoneRaw.com.
Enjoy this cake for dessert and breakfast (we definitely did!)
p.s. I used almonds instead of pecans and blueberries instead of strawberries.

Thanks! Our first year being married went by super fast! This cake is so good, I love eating it for dessert and breakfast!
