This last weekend flew by. I was happy to spend time with great friends, family and Nathan of course =)

Friday: An incredibly busy day with hours spent in the kitchen preparing edible gifts =) (gluten free bread, peanut butter cookies, kale chips, roasted chickpeas, granola bar bites…) We left our little apartment shortly after five and started the two hour drive north to our friend’s farmhouse. The evening included baby chickens, techno dancing, great conversations and a ‘warehouse’ jazz hip hop concert. Needless to say we were both happy and exhausted when we went to sleep at the wonderful time of 3:30 am. 😉

Saturday: Waffle House with friends and then a day spent with both families (Happy Birthday Holli!) and some discount grocery shopping on the side. (gluten free brownie mixes?? yes please! )

Sunday: More family time, some great food, and a nice evening service. (Happy Mothers Day to both our lovely moms!)

Now its Monday and I am ready to get all unpacked and back into my routine =) I have some hopefully yummy meals planned for this week…

  • Thai Peanut Burger Wraps; Sweet Potato Fries; Asian Coleslaw
  • Pesto Polenta Cakes; BBQ Lentils; Roasted Cauliflower
  • Crusty Fish Fillets w/ Roasted Peppers; Balsamic – Glazed Carrots & Kale ; Quinoa with Cumin Lime Vinaigrette
