Who can turn down the comforting texture/flavor of gnocchi? This recipe was simple, relatively fast (if you microwave the sweet potato) and delicious. I boiled the gnocchi before work and then sauteed them in a little earth balance, sucanat and sage – yum! As you can probably guess from the photos I have never made gnocchi before – therefore my technique might be totally wrong, and the look of the gnocchi similarly so… but it was delicious! I had these on a bed of lettuce, sprouts and cranberries. And on the side – pesto millet (which I will hopefully post about in the near future).
