This is an example of me pulling lots of different recipes and ingredients together, throwing them in an oven and hoping for the best =) The reason I couldn’t follow any recipe exact is that it is really hard to find a vegan lasagna that is soy free. (and I also had an interesting combination of vegetables that needed to be used). For all my improvisation it turned out really well, Nathan definitely approved =).

This had many layers as you have probably guessed. I used thinly sliced zucchini instead of pasta, a cashew cheese, a spinach pesto, and a pile of sauteed veggies (think kale, carrots, onions and mushrooms). I will link the cheese and pesto recipe I used, but really, just throw in whatever you want.
