Our adventures with seitan have been, for the most part, fun and yummy. We’ve made ‘italian sausage,’ ‘fish,’ ‘chicken,’ and thick ‘sandwich sausage.’ It is a very delicious and filling main course, and can be prepared in many ways. This particular seitan is the most juicy and flavorful we’ve ever made. I was really happy with the way these turned out, and although the recipe called for breading and frying the ‘chicken,’ we decided to eat it straight from the broth with jalapeno corn gravy. This recipe makes a very large batch, evening after halving it there was yummy leftovers to freeze.
